Cooking class
Sushi.
Four kinds of sushi in one evening: nigiri with fresh salmon and tuna, temaki handrolls, maki rolls and California rolls. Rolling technique + rice + fillings + presentation.
What is a Sushi cooking class at Julia’s?
A sushi class at Julia’s Cooking Studio is three hours of cooking, in which you make four kinds: nigiri with fresh salmon and tuna, temaki handrolls, maki with the bamboo mat, and the California roll.
We start with the rice. Not because it is the easiest step, but because everything stands or falls with it: too wet and your roll opens up, too dry and your nigiri will not hold.
Rolling takes a quarter of an hour to learn. Rice takes an evening.
After that it goes faster than you think. We start simple with maki, build up to the inside-out California roll with sesame, and you make the temaki in between, straight from the hand.
At the end there is almost always more sushi than you can eat. Whatever is left goes home in a box, and so do the recipes.
Three hours, and this is what’s on your plate.
Nigiri
Hand-shaped rice with salmon and tuna. Classic. Simple looks, real skill.
Temaki (handrolls)
Cone-shaped nori filled with rice and fresh ingredients. Casual and quick.
Maki rolls
Rolled with a bamboo mat. You’ll roll about 30 pieces per person before the night’s over.
California rolls
Inside-out rolls with avocado, crab, sesame. The gateway sushi.
Roughly this rhythm.
Welcome
Chinese tea from Yunnan and a snack. Time to settle in, meet each other.
Recipes
Julia explains what we’re making. You take the recipes home.
