Cooking class
Chinese.
The cuisine I grew up with. Dumplings you fold yourself, fresh noodles with vegetables and chicken, and Fenglisu (pineapple cakes) to finish.
What is a Chinese cooking class at Julia’s?
A Chinese cooking class at Julia’s Cooking Studio is three hours of cooking, in which you fold your own dumplings, wok noodles with fresh vegetables and chicken, and finish with a Fenglisu.
This is the cuisine I grew up with. We start with tea from Yunnan, from trees over a hundred years old, and after that the hands go into the dough.
Nobody learns to fold dumplings from a book.
It sits in your fingers, and around the fifth one you feel it yourself. While the wok is roaring the first course already goes to the table: you eat what you just made, and only then start on the next one.
For larger groups an assisting chef cooks along, so no pan boils over while I am explaining at the other end of the kitchen. You go home with the recipes, and with fingers that know how to close a dumpling.
Three hours, and this is what’s on your plate.
Chinese dumplings
You make the filling and fold them yourself. Small, precise, meditative.
Noodles with fresh vegetables and chicken
Quick wok, sweet-savory sauce, lots of texture.
Fenglisu
The Chinese version of the Portuguese tart. Sweet, creamy, caramel-crackle.
Roughly this rhythm.
Welcome
Chinese tea from Yunnan and a snack. Time to settle in, meet each other.
Recipes
Julia explains what we’re making. You take the recipes home.
Cook and eat
Cook one course, then sit at the table to eat what you just made.
